New distillery uses local ingredients

Medford, Ore. —   Oregon is known for it’s craft beer with more than 200 brewing facilities across the state. But a pair of friends from California, are hoping to put Southern Oregon on the map for liquor.

Immortal Spirits and Distilling Company began as a project between two friends; one had directions for making a still, the other was a metal fabricator.

“I made it in his garage, in about five days, with a bunch of hammers and nails, and that’s how our first still was built,” co-owner Enrico Carini says.

Today those same principals remain; all of their equipment, and all of their products are made by hand.

“We don’t take any shortcuts,” Carini says, “we make huge cuts, and only take the hearts of our spirits and bottle that.”
Their ingredients are locally sourced, and whether it’s bourbon, or brandy, they say they try to showcase what the spirits can do and the flavors you can achieve with them. They boast Southern Oregon’s only single malt whiskey distillery, and the company has now opened a tasting room in Downtown Medford.
