What’s On the Gridiron: Cowboy Caviar

Calling all Dallas Cowboys fans!

This weeks gridiron grub is a fun and fancy take on salsa.  Here is what you’ll need to make cowboy caviar:

Ingredients:

1 Avocado

1 can of Black beans

1/4 cup Cilantro

1 can of Corn

1/2 tsp Garlic powder

Juice of 1 lime

1/2 Red onion

3 Roma tomatoes

1/2 Jalapeño *optional

Salt & pepper to taste

 

Steps:

  1. Dice the avocado, cilantro, onion and tomatoes and jalapeno (optional).
  2. Combine the above in ingredients into a medium sized bowl, adding in the black beans corn.  Stir.
  3. Next, add in the garlic powder, salt and pepper and lime juice and stir once again.
  4. Your ready to serve your cowboy caviar or you can store it in the fridge overnight.  Serve with tortilla chips and enjoy!
